On September 24, 2025, S.Pellegrino returns to Las Vegas with the second 777 High Stakes Gastronomy Dinner, uniting seven acclaimed chefs, a signature cocktail program and one incredible host.

Las Vegas thrives on spectacle, but for one night this September the real show will take place at the table. On September 24, S.Pellegrino will host the second edition of its 777 High Stakes Gastronomy Dinner at ARIA Resort & Casino—a seven-course collaboration from some of the most dynamic chefs working in America today.

The evening gathers an impressive roster: Curtis Duffy of Ever in Chicago, Hillary Sterling of Ci Siamo in New York, Juan Manuel Barrientos of Elcielo, Masako Morishita of Perry’s in Washington, D.C., Ryan Ratino of Jônt in D.C., Siddharth Ahuja of Gymkhana (opening soon in Las Vegas), and Valerie Chang of Maty’s in Miami. Cocktails will be led by Craig Schoettler, the executive director of beverage for MGM Resorts, who helms the acclaimed Vault bar at the Bellagio. Guiding the night as host is Kevin Boehm, co-founder of Boka Hospitality and a James Beard Award winner recognized as one of the industry’s most compelling voices.

The theme is pure S.Pellegrino theater: a nod to the brand’s historic casino in San Pellegrino Terme, Italy. Expect playful, surprising courses that riff on games of chance and bring the energy of Las Vegas to the plate. Between courses, guests will be treated to interactive moments that echo the spirit of the Strip while staying rooted in culinary craft.

Last year’s inaugural edition set the tone with edible dice, Dali-inspired oysters, and a glittering lineup of chefs including Emma Bengtsson, Chintan Pandya, and Eunji Lee. This year raises the stakes further, with a fresh group of talent bringing their own creativity to the table.

For S.Pellegrino, the dinner is more than a spectacle—it’s a statement of intent.
