The Chef

Brian Dunsmoor cooks with restraint, obsession, and an unshakable respect for American food history. His work is rooted in fire, patience, and clarity, never nostalgia for its own sake. After gaining early attention in Los Angeles with Wolf in Sheep’s Clothing and The Hart and the Hunter, he further sharpened his voice at Hatchet Hall, where he became known for stripping cooking back to its essentials while building restaurants defined as much by hospitality as by food.

In 2022, he opened Dunsmoor, a fire-driven restaurant dedicated to heritage American cooking, earning one of the top spots on the Los Angeles Times 101 List. Today, Brian is a builder of teams and ideas, relentlessly refining his work with the belief that doing less, better, is the hardest thing there is. He lives in Pasadena with his wife Jess and their dog, Ishmael. He is also an avid pool player and a serious cyclist.
