If you like to add heat to your cooking with chile then you’ll know that no two heats are the same. Some chiles are much hotter than others, some are sweet, some smoky, tangy, fruity - the list is endless.
Getting to grips with chiles and knowing which one to use when cooking different dishes is a great skill to work on in the kitchen.
