For someone who has built a restaurant empire across the Americas and Europe, Peruvian chef Gaston Acurio maintains his feet firmly planted on the ground. The interview was published on the heels of Latin America's 50 Best Restaurant Awards during which Acurio was given The Diner's Club Lifetime Achievement Award. During his extensive career, Acurio has developed a multitude of brands including Tanta restaurants and La Mar ceviche and tapas bar. Aside from expanding his restaurants, his plans for the future include launching a series of hotels.
