The new TV show Mind of a Chef - presented by chef David Chang on PBS - is gaining lots of attention at the moment.
Last week we brought you a great clip of the show's seafood epsiode with Rene Redzepi and this week the studio have released a clip of Chang making puffed egg.
The chef, who is famous for his Momofuku restaurants, shows us one of his kitchen creation made with egg, bacon dashi and a little bit of science.
