Rene Redzepi is the king of Nordic cuisine, the owner of a restaurant - Noma - that holds just 40 diners yet a restaurant that has been voted the best in the world three times in a row. He could be forgiven for having an ego, yet he doesn't, he is humble, down to earth and never assuming - he understands why Noma is at the top and that it's his team of 15-years that put and keep them there.
