We’re constantly seeing new ideas for the best way to cook a steak, we’ve seen the reverse sear, the sous vide sear, we’ve even looked at a frozen cooking technique for steak.
The newest steak cooking style to catch our eye is one that’s just been promoted by the food personality Alton Brown who posted a pictures online of himself cooking steak with mayonnaise.

Turns out, Brown is not the only person to experiment with mayo as an oil for cooking steak. There are a number of videos online for mayonnaise steak and people seem to love it.
As crazy as it might seem, mayo is made up largely of oil and the other ingredients, egg, lemon and a little vinegar would also add some seasoning.
A quick read through the comments on Brown’s Instagram page and it’s obvious that many people use mayo as a substitute for oil. One user wrote, “Grandmas secret, surprised you’re surprised?! Sous vide in mayo for 1-2 hours and then sear on an iron skillet.”

Another added: “Excellent choice!!! I use mayo instead of butter for grilled cheese sandwiches and for katsu!”
Not everyone was convinced, “Escoffier is either rolling in his grave or screaming in a French accent, "Alton, you are marvelous”.”
