There is French haute cuisine. And then there is Alain Passard. His restaurant L’Arpège, in the left bank of the Ville Lumière, is the stuff of legend for Parisian and international fine dining lovers alike. Not only has it been the cradle of some of the most interesting innovations in modern cuisine; it has long served as training grounds for a whole new generation of renowned young chefs, whose cooking still reflects their mentor’s precious teachings. Earlier this month, under the auspices of Le Fooding, Passard and his protégés convened for Passard et les Arpégiens, a unique event in Paris: nine of Passard's disciples honored him by preparing six special meals inspired by their master's dishes. The off-beat Le Fooding Paris food event, sponsored by S.Pellegrino, was an occasion to both pay tribute to Passard and celebrate his remarkable legacy.
On 15th-16th November, the 180 lucky foodies who had a chance to partake in the happening took turns around three long tables in the charming premises of a Parisian atelier. Passard himself, in an open kitchen just beside, prepared some of his signature dishes. Along with him were some of L’Arpège finest graduates, who went on to establish their own well-loved restaurants. Participating chefs include Betrand Grébaut (Septime, Paris), David Toutain (Restaurant David Toutain, Paris), Mauro Colagreco (Mirazur, Menton), Björn Frantzén (Restaurant Frantzén, Stockholm), Tatiana Levha (Le Servan, Paris), Sven Chartier (Saturne, Paris), Ludo Lefebvre(Trois Mec, Los Angeles), Marc Cordonnier (Gare au Gorille, Paris) and the pastry chef Sakura Charrier (Kokoro, Paris). Each of them contributed with their own reinterpretations of Passard's classics to the six meals served over the course of the two days, much to the delight of everyone present.
