As part of our Lessons Learned series of personal letters reflecting on the Sages' journeys, obstacles, failures and successes, Fine Dining Lovers asked the Argentinian-Italian chef from three-Michelin-starred Mirazur on the French Riviera (and 'World's Best Restaurant' 2019) to write a letter sharing some words of wisdom with a younger version of himself.
