There is nothing more comforting than a homemade chicken pot pie, especially in the colder months. When the wind is blowing hard, the rain drives at the window and its dark by early afternoon, a chicken pot pie recipe is something you can turn to and with minimal effort, you have a warming meal that will wrap the family in a soothing blanket of chickeny goodness and fill the house with a wonderful aroma.
An easy chicken pot pie recipe is a go-to recipe for cold winter Sundays, but can be enjoyed all the year round. The only tricky part of a homemade chicken pot pie is the pastry. You can choose to make a filo or shortcrust pastry depending on what you prefer, or you can use a store-bought pastry sheet to save time and effort.
The filling is the part that really makes the chicken pot pie recipe great, and it usually includes a chicken mixture with onions carrots and seasoned with salt and pepper. Start with the onions and carrots, finely chopped and sweat them in a pot until caramelised.
Your chicken should be cooked separately in a pot or if you want to save time you can buy ready-cooked chicken like a rotisserie chicken. Add the chicken breasts to the pot with the onions and carrots and cook for a few minutes. Add a cup and a half of chicken broth and frozen peas and allow to cook at low heat, with the whole mixture bubbling for about 15 minutes. Remove from the heat and allow to cool.
Melt butter in a pan and stir in flour slowly, about two tablespoons. Slowly add a cup of heavy cream, stirring constantly, and reduce the heat to the minimum. When you have a thick, smooth consistency, season with salt and pepper and a pinch of nutmeg, then add this to the pot with the chicken mixture.
Take a pie plate and lay out a layer of the pastry on the bottom, then spoon the chicken mixture with a ladle and place a layer of top crust over the top. Be careful at this point not to scald yourself with a filing mixture that is too hot. Pinch the top crust all the way around to form a thick pie crust.
Pierce the top crust with a knife a few times and place the chicken pot pie in the oven on medium heat. Beat the yolk and the egg together with a fork and brush the egg mix over the crust for a glaze. Cook the chicken pot pie until the crust is golden brown, remove from the oven and allow to cool well before cutting and spooning out the pie.
