Here’s an absolutely beautiful video of the Peruvian chef Virgilio Martinez as he plates up some of the newest creations at his Central restaurant in Lima.
Central was picked number one on Latin America’s 50 Best Restaurants list in 2014 with Martinez and his partner Pia highlighted for their extensively researched tasting menus that use the varied ingredients offered across the different altitudes of Peru.
The chef is also involved with the Lima restaurant in London and the more recently opened Lima Floral, also London. In the video we see him carefully plating some of his new dishes: the first is a mixture of seeds and quinoas, the second is Andean meat with milk and the last is made with avocado and Amazonian clams.
The film is directed by Patricia Perez who is also responsible for the new Finding Gaston documentary which follows the work of chef Gaston Acurio - you can see a trailer for that here.
