The chef is also involved with the Lima restaurant in London and the more recently opened Lima Floral, also London. In the video we see him carefully plating some of his new dishes: the first is a mixture of seeds and quinoas, the second is Andean meat with milk and the last is made with avocado and Amazonian clams.
The film is directed by Patricia Perez who is also responsible for the new Finding Gaston documentary which follows the work of chef Gaston Acurio - you can see a trailer for that here.
