Tomat is a Californian restaurant in Westchester, Los Angeles, centered on seasonal cooking, an on-site urban garden, and an all-day approach that moves from morning coffee and pastries to a more refined dinner service.
Founded by chef Harry Posner and his wife, Natalie Dial (also the restaurant's wine director), Tomat reflects the couple’s shared interest in sustainability, community, and ingredient-led cooking. Posner, who trained at the Ballymaloe Cookery School and worked at The Clove Club in London and INUA in Tokyo, leads the kitchen, while Dial oversees operations and community initiatives.
The menu follows the rhythms of California’s produce, shifting throughout the day. Morning and midday offerings lean into lighter fare, including casual composed dishes, in addition to coffee & pastries, while dinner introduces a more composed format. Across all services, the cooking reflects Posner’s Persian heritage and his experience in the UK, Europe, and Japan, with dishes such as barbari bread with roasted tomato butter, sashimi paired with English mustard, and pork served with apple and tomatillo.
