“Warm, inviting, and downright delicious” is how chef Regi Mathew describes the experience at Chatti, his New York restaurant on West 37th Street. Here, the chef-partner brings the flavors of his home state, Kerala—on India’s southwest coast—to a global audience with tavern-style (toddy shop) specialties such as Toddy Shop Beef Fry and Duck Mappas.
“Toddy shop cuisine is a beautiful reflection of the spirit of Kerala—fostering togetherness, warmth, and celebration,” says Mathew. While toddy shops are often associated with drinking, comes from toddy, a mildly alcoholic beverage tapped from palm sap, they’re also integral to the region’s social and cultural fabric. “As a child, I have fond memories of visiting toddy shops with my family for meals, and even running errands to buy toddy, not for drinking, but to ferment appam batter at home,” he recalls.
