
Cherries and Burrata Salad
This salad with cherries and burrata cheese is the perfect recipe for a delicious summer side.

ingredients
Lemon Juice
1/2 lemon
Mustard
1/2 tsp, Dijon
Sugar
1 pinch
Salt
1/4 tsp, Kosher
Pepper
1/4 tsp, black, freshly ground
Extra Virgin Olive Oil
120 ml
Fennels
2 bulbs, trimmed, halved and sliced
Scallion
2, thinly sliced
Radishes
4 - 6, thinly sliced
Bell Peppers
1 yellow, cored, seeded, and finely diced
Burrata
300 g, fresh
Cherries
150 g, red, washed
Basil
1 small handful, small leaves
Salt
black Himalayan, to serve
Preparation
How to make a delicious cherries and burrata salad
For the dressing
- Whisk together lemon juice, mustard, sugar, salt and pepper in a large mixing bowl until sugar and salt have dissolved.
- Gradually whisk in olive oil in a slow, steady stream until dressing is thickened and emulsified.
For the salad
- Add fennel, scallion, radishes and yellow pepper to the bowl of dressing, tossing well to coat.
- Divide between serving bowls and top with a dollop of burrata as well as cherries, basil leaves and a sprinkling of black Himalayan salt.
- Best served with glasses of chilled rosé wine.
