How to make a delicious cod with coconut curry sauce
Wash and trim the spring onions and cut into rings at an angle.
Heat the oil and sweat the garlic and spring onion until soft.
Add the curry powder, coriander seeds and bay leaf and sweat all together for a minute or two.
Add the coconut milk and fish stock, bring to the boil and simmer over a medium heat for about 10 minutes.
Wash the cod fillet, pat dry and cut into bite-sized pieces.
Add to the sauce with the drained and washed mushrooms and cook very gently for about 8 minutes, until done.
Season to taste with fish sauce and serve with rice if you wish.
