How to make vegan coconut flan with kiwi
To prepare the vegan coconut flan with kiwi first mix together the lemon juice, 50 g of the caster sugar and 100 ml water and bring to the boil.
Add the kiwi slices, bring to the boil again and drain.
Place the kiwi slices in the base and around the sides of four mini pudding basins and leave to chill in the fridge.
Soften the vegan gelatine in cold water for 5 minutes.
Put the coconut milk, vanilla sugar and the remaining caster sugar in a pot and bring to the boil.
Remove from the heat and wring out the gelatine.
Stir the gelatine into the coconut milk mixture until it dissolves.
Chill in the fridge and transfer to the pudding basins just before the cream begins to gel.
Chill for at least 3 hours.
To serve, knock the flans out of their moulds and sprinkle with coconut.
Serve the vegan coconut flan garnished with mint.
