Ingredients

Garlic cloves: 6, roasted and peeled

Sourdough bread: 2.5 oz

Green grapes: 4.5 oz

Cucumber: 4.5 oz

Water: 4 oz

Natural yogurt: 4 oz

Almonds: 3.5 oz, toasted

Salt: to taste

Push the roasted garlic cloves through a crusher. Cut the sourdough bread into 1-inch pieces, halve the green grapes, and dice the cucumber. Add the ingredients to a large mixing bowl.

Mix in the water, natural yogurt, and toasted almonds. Transfer to the fridge to marinate. Let sit overnight.

Add the ingredients to a blender, and blitz until smooth. Pass through a fine-mesh sieve.

Season to taste with salt and serve ice cold.

To help reduce food waste in the kitchen, you can make this recipe using leftover stale bread. It’s a useful way to make use of old bread that’s now too tough to eat on its own. If you don’t have any stale bread, however, simply opt for a good quality French white bread and remove the crusts.

Gazpacho is perhaps one of the most famous Spanish recipes globally, and traditionally is made with a base of Mediterranean ingredients including tomatoes, garlic, onion, red peppers, olive oil, and vinegar. This white gazpacho is already a variation on the traditional recipe, but you can twist it further. For example, try substituting in other ingredients, such as sherry vinegar, to add a complex, tangy note, or red chili flakes, for a kick of heat. You can also add chicken or vegetable stock to a white gazpacho soup mix, to deepen the flavor.
