Overripe bananas: 3, peeled

Vegetable oil: 2.5 oz

Brown sugar: 3.5 oz

All purpose flour: 8 oz

Baking powder: 3 tsp

Cinnamon: 3 tsp

Preheat the oven to 350°F. Mash the peeled bananas and mix with the vegetable oil and brown sugar in a large mixing bowl.

Add the all-purpose flour, baking powder, and cinnamon. Fold together.

Bake in an oiled loaf tin for 20 minutes. Cover with tin foil and bake for a further 20 minutes. Check for doneness by inserting a clean skewer. If this comes out clean it’s ready.

Vegan banana bread can also be stored in the freezer for up to three months. Individually wrap the slices and transfer to an airtight container. When ready to eat, thaw at room temperature for one hour.
