Granulated sugar: 3.5 oz

Onions: 25 oz, chopped

Salt: to taste

Black pepper: to taste

Red wine vinegar: 4 oz

Heat the vegetable oil in a skillet over medium heat. Stir the granulated sugar into the oil until the mixture is a light caramel color, after 10 minutes.

Add the chopped onions, salt, and black pepper to the skillet. Cook until all of the sugar has dissolved, stirring frequently, for 15 minutes.

Pour in the red wine vinegar and simmer until the mixture reaches a jam-like thickness, after 30 minutes. Let cool and transfer to a sterilized jar.
