Ingredients

Heavy cream: 125g

Lemon: 1/2

Caster sugar: 25g

Butter: 40g

Caster sugar: 40g

All purpose flour: 40g

Egg whites: 1

This lemon cream dessert was created by chef Enrico Derflingher for the then Prince of Wales, now King Charles III, on one of the Shetland Islands. It was created out of necessity because of a scarcity of ingredients. The Prince liked it so much it became a favourite and he requested that the Italian chef prepare it at formal events at Kensington Palace.
Method

Mix the ingredients for the biscuits together, adding the egg white last. Leave to rest in the refrigerator.

Mix together the cream, sugar, lemon peel and heat up to 80 ° C. Cool to 55 ° C and add lemon juice when cooled, then heat everything up to 45 ° C and pass through a sieve.

Place in bowls and cool in the refrigerator, using silicone paper. Roll out the mixture of the tiles into a round shape and bake in the oven at 180 ° C for 3-4 minutes.

04.

Remove from the oven and arrange on a corrugated pan, put a drop of sauce on the lemon cream and a biscuit.
