Ingredients

Bacon fat: 2 tbsp

Onion: 1, sliced

Ham hocks: 1

Garlic cloves: 2, smashed

Chicken stock: 32 oz

Water: 8 oz

Collard greens: 32 oz, stemmed, cleaned and chopped

Salt: to taste

Heat the bacon fat in a saucepan over medium heat. Sauté the sliced onion in the bacon fat for 5 minutes, until it starts to brown.

Add the ham hock, smashed garlic cloves, chicken stock, and water to the saucepan and bring to a simmer. Cover and let cook for 1 hour.

Add the collard greens to the pan, and cook until tender for 45 minutes.

Remove the ham hock and pull the meat off the bones. Chop into bite-sized pieces and mix back into the pan with the greens.

Season to taste with salt and serve warm from the pan.
