Aaron Brooks’ Miami: From White Clam Pizza to Fried Chicken Wednesdays

The Sunny’s executive chef’s guide to the Magic City, highlighting pizza worth detouring for, fried chicken that draws a crowd, seaside crudo, and a brunch pancake subject to “Dad Tax.”

About the list

Sunny’s Steakhouse executive chef Aaron Brooks has called Miami home for more than a decade and has done his fair share of dining out. From pizza to pancakes, he has his go-to spots that he and his family return to again and again. These are the Miami restaurants Brooks couldn’t live without.

Of course, ViceVersa for pizza! Our bar downtown is run by beverage maestro Valentino Longo and the ultra-talented chef Justin Flit. Valentino is known for his killer Negronis, but don’t sleep on the Martini Doppio. As for pies, I’m completely in love with Justin’s white clam pie—hands down the best. Insider tip: order the Caesar salad and fold the romaine leaves into your slice. Truly next level.

Family brunch in the Grove is the best. We’ll take our bikes down and cruise along the water into the heart of the village, where we end up at Chug’s. The kids go crazy for chef Mike Beltran’s cast-iron pancake (always subject to a hefty bit of “Dad Tax”), while a couple of sides of his housemade bacon never go astray. Sitting outside in the courtyard, soaking up the vibe, always makes me feel lucky to live in such a beautiful city.

One of my most memorable dining experiences in Miami was at Sra. Martinez when Michelle Bernstein was in the Design District. Now she’s in Coral Gables, and I couldn’t be more excited. I was there last week for Fried Chicken Wednesdays—so crispy, so moist! Everything Michelle does is outstanding, but if you’re around on a Wednesday, stop by for that bird.

If you are on the beach, stop by the new crudo bar Fluke by the Pirolos, and whilst all the seafood selections are amazing, don’t sleep on the “Big Macch,” which could take the title for one of my favorite burgers. Best washed down with a Pirolo Pilsner collaboration beer with J. Wakefield Brewing. We are also lucky to have Mike and the team working their magic as our new neighbors at Bar Bucce. Everything is absolutely delicious, from the freshly sliced charcuterie to the pizzas and antipasti. On the way out, don’t forget to grab assorted provisions for the pantry and home bar from the carefully curated selection of wines, spirits, and grocery items.

For date night I’m headed to Recoveco. The team there is doing an amazing job. Nico Martinez and Tere Gallina are not only artfully creating dishes to please the eye and palate, but also lean heavily into a respect for the flavors and ingredients of Miami. Every bite I’ve had there has been absolutely delicious! Be sure to get chatty with their wine expert Shannon Gable. If it were me, I wouldn’t even look at a list—just ask for whatever she’s currently excited about!
