A Look Inside Frantzén, Sweden’s Only Three-Star Michelin Restaurant

Frantzén, in Stockholm, became the first restaurant in Sweden to receive three stars from the Michelin Guide in February this year. Run by chef Björn Frantzén, the restaurant does modern Nordic cooking with a focus on local ingredients with a mixture of modern, classic French and Japanese techniques.

Coming from class 1977, Frantzén previously worked at Chez Nico’s at 90 Park Lane, Restaurant L’Arpege, both three-star Michelin joints. His background in classic French cooking and influences from Asian and Japanese cuisines are incorporated in the dishes at his headlining restaurant, which he will be replicating at Zén, the sister restaurant in the works in Singapore planned to open in November.

Frantzén’s test kitchen creates over 100 dishes and combinations in a year, but only 10-15 of these make it on the menu. Their YouTube channel gives you a visual taste of their impeccable dishes that are true food porn-worthy. Check them out below. 

1. Satio Tempestas: Bitter and pickled greens, crunchy fish scales, warm infusion, whipped butter milk with mortar herbs. Served with green pea & matcha beer.

2. King Crab: King crab grilled over birch embers, “hot sauce”, sea urchin, finger lime and chrysanthemum.

3. Salt Baked Chewy Beetroot: Salt baked chewy beetroot, whipped liquorice, griottes cherries and aged violet vinegar.

4. Crudo: Crudo: blue fin tuna “otoro”, purple radish, myoga, horseradish and salted tomato vinaigrette.


 
5. French Toast: French toast with vacca rossa, truffle and 100- year old vinegar.



6. Chawanmushi: Chawanmushi, "Frantzén prestige caviar” and aged pork broth.


 
7. Baked Wild Turbot: Baked wild turbot, black trumpet mushroom, sprouted walnut, homemade butter with blond miso and yellow wine. 



8. Bbq of Aged Quail: Bbq of aged quail, truffled enbre, sauce périgueux à la royale.
