This episode of Why Waste? is presented by chef Jessica Rosval, of Casa Maria Luigia in Modena, who shows us how to clean and render beef fat to extract the flavour, which can be used as a replacement for butter or oil in a wide variety of recipes, including roast potatoes, or wherever you would traditionally use butter for shortening.
Rosval shares the recipes for Golden Beef Fat, which is then used to make leftover empanadas with spiced yoghurt, using leftover brisket.
