The Flavor Forecast is a team of experts who have working to identify culinary trends in the dining industry since 2000.
Every year they take a look at emerging flavor combinations and for 2013 they've created a wonderful infographic to display their results.
Combinations such as bitter chocolate with sweet basil and passion fruit, fresh broccoli with dukkah and artichoke, paprika and hazelnut are just some of the combinations they forecast will be big in 2013.
The infographic also looks at other culinary trends such as ethnic mash-ups, the increase of sales in mason jars and how everyone will be micro brewing.
Rather than just being faux-meat, Mamu is different. It's a mushroom-based meat alternative that's getting its launch in restaurants so that chefs can test its versatility. Flora Tsapovsky investigates.
