An Interview with Matias Perdomo
This week FDL sat down for an interview with the Uruguayan chef Matias Perdomo of the Al Pont De Ferr Restaurant in Milan. A one Michelin starred chef FDL talked with him about his unique approach to food, often blowing sugar like glass to create some of his dishes.
He has built a trattoria with a strong reputation for its informal and welcoming atmosphere yet distinct and surprising approach to food. Matias talked with FDL about his passion for cooking, his influences and why he doesn't mind disturbing people with his food.
This is a great interview with a rising young chef who is not afraid to change convention and do things his own way.
