This week on Fine Dining Lovers we had an exclusive interview with the master himself, Alain Ducasse.
Ducasse sat down to offer up a great interview about his work, his upcoming projects, trends in dining and a young chef he believes we should be keeping an eye on.
Ducasse sits at the top of a unique culinary empire and this is a snapshot into the his great mind, how he approached work on a daily basis and just why he’s been so successful.
A Tuscan Dinner, Gelinaz! Style
From here we travelled to a special dinner at the Acqua Panna villa in Tuscany as the Gelnaz! gang came to Florence for a three day spiritual retreat.
We caught up with the international chef collective at the end of their retreat as they set about a challenge to remix the classic dishes of the Italian butcher, Dario Cecchini.
Cecchini made three classic Tuscan dishes as Gelinaz! chefs from all over the world created their own interpretations of Cecchini’s plates for a special dinner at the Villa.
Farm to Table
Finishing the week we caught up with a whole bunch of chefs to ask them about the growing link between the farm and table and what exactly they’re doing to promote farm to restaurant relationships in their own businesses.
We took the opportunity to speak with Gaston Acurio, Andreas Caminada and Umberto Bombana who each offered up their own unique views on farm to table dining and how it has effected the way they work.
