For a long time Nilsson asked people to submit recipes, ingredients and culinary knowledge from their local area alongside his own extensive research. In October The Nordic Cookbook he created will go on sale with Phaidon.
The book is said to be the first comprehensive guide to cuisine in the Nordic regions published in English and it’s been a massive undertaking for the chef.
On top of the research and development of the book, Nilsson has also shot much of the photography in the book and in the video below he speaks about his role as a photographer for the book.
