Counter- is a MICHELIN-starred and Green Star-awarded immersive dining experience in Charlotte, North Carolina, created by executive chef and founder Sam Hart (they/them). Rather than centering solely on the food, Counter- blends storytelling, music, art, and seasonal tasting menus into a multi-sensory experience designed to evoke emotion and spark conversation.
The restaurant's quarterly menus are built around themes ranging from music and modern art to mental health, with every element of the experience, from the tableware and soundtrack to the presentation, reinforcing the story. The minimalist dining room serves as a blank canvas, allowing each menu to transform the space with new artistic and sensory elements.
Counter- also reflects Hart's commitment to reshaping restaurant culture. Operated as a collaborative effort among its employees, the restaurant emphasizes mentorship and professional development while encouraging team members to pursue their own future ventures. Beyond the kitchen, Counter- supports Charlotte-based nonprofit organizations through annual charitable donations and maintains a wine program led by Beverage Director Michael Myers that highlights female, LGBTQ+, and minority winemakers alongside thoughtfully curated non-alcoholic pairings.
Like a theatrical performance, Counter- offers a shared dining experience with a single seating limited to 18 guests per service, Wednesday through Saturday. Reservations are required.
