COTE Vegas brings the Michelin-starred swagger of COTE Korean Steakhouse to the heart of the Las Vegas Strip in a sprawling, neon-lit temple to beef. The first West Coast outpost of Simon Kim’s Gracious Hospitality restaurant opened in October 2025, building on the original New York flagship, which debuted in 2017, and subsequent locations in Miami and Singapore. Located on the ground floor of The Venetian Resort, it leans into Vegas maximalism with stadium-style seating and a high-energy dining room built for a see-and-be-seen crowd.
Executive chef David Shim’s menu builds on Korean barbecue and American steakhouse traditions. The signature steak omakase remains the centerpiece, featuring dry-aged beef and Japanese A5 wagyu, including cuts from Miyazaki, Sendai, and Kobe. Vegas-exclusive dishes include the Blackjack Sandwich, which layers Kagoshima A5 wagyu with Périgord black truffle and truffle aioli on milk toast, and a seafood plateau with hwe (Korean sashimi), caviar, Shigoku “oyster dynamite,” chilled oysters, shrimp cocktail, and lobster served escargot-style in whelk shells.
Other highlights include build-your-own gimbap topped with caviar, uni, and bluefin tuna; black cod in kimchi-jjigae sauce; and somyun in anchovy broth, underscoring the kitchen’s confident interplay of depth, spice, and indulgence. On the beverage front, COTE Vegas offers classic cocktails alongside a serious wine program. Together, it signals a new chapter of Vegas hedonism.
