Bar Le Côte is a seafood restaurant built on product and place, drawing from the Santa Barbara coast and the Santa Ynez Valley. Opened by Daisy and Greg Ryan with chef Brad Mathews in 2021 in Los Olivos, the restaurant takes inspiration from classic coastal seafood houses and filters it through a California lens. The cooking is seasonal, precise, and relaxed, with a focus on clarity and consistency.

The crudo shifts daily, sometimes clean slices of halibut with citrus and oil, sometimes deeper preparations built around tuna and heat. Oysters are served cold and bright, dressed with just enough house-made mignonette to sharpen them. Dry-aged branzino, split in half and cooked over live fire until the skin blisters and the flesh just gives, anchors the menu. It is served seasonally with onion purée, pickled mustard seeds, and onion jam. Alongside it, skewers of marinated white anchovies and a simple market salad reflect a tight menu where everything earns its place.

The room follows the same logic, with green walls, warm wood, checkered floors, sunlight during the day, and a low hum at night. The bar is lively, the soundtrack curated by Mathews, and the atmosphere welcoming to both locals and destination diners. Guests can stop in for peel-and-eat shrimp paired with a glass of Santa Barbara Sauvignon Blanc, or settle in from afternoon into evening, building a meal from shared crudo, roasted oysters, and a bottle of Lo-Fi chilled red. However it is approached, the experience holds together.
