Ingredients

Potatoes: 250 g, pessed cooked

All purpose flour: 2 tbsp

Eggs: 3, separated

Salt

White pepper

An exclusive and easy potato blini recipe prepared and shared by chef Phil Wood, one of the speakers at 2015 Food on the Edge event in Galway.

Method
01.

To prepare the potato blini start beating potato until smooth, add flour.

02.

Beat in egg yolks.

Add whites gradually mixing well to incorporate.

03.

Gently stir through flour and season with salt and white pepper.

04.

Keep the potato blini warm.
