Ingredients

Instant yeast: 1 tsp

Sugar: 1 tsp

Warm water: 8 oz

Bread flour: 18 oz

Salt: 1 tsp

Olive oil: 2 tbsp

Whole peeled tomatoes: 28 oz

Garlic cloves: 2

Dried oregano: 1 tsp

Black pepper: to taste

Mozzarella cheese: 12 oz

Pepperoni: 6 oz

Make the Dough

In a large mixing bowl combine the instant yeast, sugar, and warm water. Let sit for 5 minutes.

Add the bread flour, salt, and olive oil and mix until a sticky dough forms. Knead for 8 minutes on a floured surface until smooth.

Transfer the dough to an oiled bowl and cover. Let rise for 1 hour in a warm, dark place until doubled in size.

Prepare the Sauce

Blend the whole peeled tomatoes in a food processor. Heat the olive oil in a pan and sauté the minced garlic cloves until fragrant, for 30 seconds.

Add the tomatoes, dried oregano, salt, and black pepper. Simmer for 10 minutes, until slightly thickened. Let cool completely.

Assemble the Pizza

Preheat the oven to 500°F. Divide the dough into 2 balls and stretch out each into a 12-inch circle. Place on a lightly floured baking sheet.

Spread a thin layer of sauce over the dough and sprinkle the mozzarella cheese evenly over the top. Add the pepperoni slices.

Bake for 10 minutes until the edges are golden and crispy. Remove from the oven. Let rest for 2 minutes and slice into large triangles.
