Pork shoulder: 64 oz

Guajillo chiles: 3

Orange juice: 2 oz

Lime juice: 2 oz

Onion: 1

Mexican oregano: 2 tsp

Ground cumin: 2 tsp

Achiote paste: 2 oz

Salt: to taste

Olive oil: 1 tbsp

Black pepper: to taste

Tortillas: 8

Pineapple: 1

Cilantro: 1 tbsp

Limes: 2

Cut the pork shoulder into thin slices and place into a large mixing bowl. Add the guajillo chiles to a pot with boiling water and soak for 5 minutes, until softened. Transfer to a cutting board and remove the seeds and stems. Set aside.

Add the guajillo chiles, orange juice, lime juice, chopped onion, Mexican oregano, ground cumin, achiote paste, and salt to a food processor. Pulse until a smooth paste forms. Pour over the pork and mix to coat. Cover and refrigerate for 4 hours.

Preheat the oven to 450°F and line a baking pan with aluminum foil. Skewer the pork shoulder and place on the baking sheet, allowing the skewers to rest on the sides of the pan. Drizzle the meat with olive oil and roast for 30 minutes. Let rest for 5 minutes before cutting into smaller pieces.

Add the roast meat to the tortillas and top with the grilled pineapple slices, fresh cilantro, and lime wedges on the side. Serve warm. 

Tips & Tricks

Tacos al pastor from Mexico are traditionally made with pork shoulder, as outlined in the recipe above. If you can’t find pork shoulder, pork neck will also work well as an alternative cut. You need to use a fatty cut so it stays juicy and tender during the roasting process. 

The pork needs at least four hours to marinate and is even tastier if left to rest overnight in the fridge. This helps to tenderize the pork and ensures the meat in the tacos is packed full of flavor, soft and tender. 

How to Serve Mexican Tacos

To serve, use corn tortillas, which you can warm through in the oven before adding the filling to the plate. Layer the tortillas starting with the meat and then building with the remaining elements and garnishes. You can enjoy these tacos on their own or serve with other Mexican dishes such as Mexican rice or refried beans.
