The Michelin Guide Seoul 2023 revealed its star selection for the South Korean capital, with a total of 176 restaurants recognised, including 35 with stars.
For the first time in six years, Michelin anointed a new three-star restaurant, Mosu, which was elevated to the highest echelon on the Michelin scale, from two stars. There was also a new two-star restaurant and six new one stars, demonstrating the depth of excellence across the city’s fine-dining scene.
At Mosu, chef Ahn Sung-jae consistently evolves his creative vision, applying the highest of standards to dishes that show “an outstanding balance of taste based on a high level of perfection,” according to the guide. At Soigné, which was awarded two stars, chef Lee Jun and his team harmonise a wide range of international flavours and influences in a coherent and inspiring form. See the new stars below:
