Perfecting Eggplant Parmigiana
This week at Fine Dining Lovers we kicked things off with a look at how to prepare one of Italy's most iconic dishes: eggplant parmigiana.
Before learning how to make it we discovered a bit of it's history. Did you know the dish is believed to have originated in Sicily? There are even some versions where people add chocolate in between the layers of eggplant!

Foraging in Montreal
From Italy we turned our attention to Montreal where foraged foods are now considered a delicacy.
One of the companies making this possible is Société-Orignal, which sells gourmet foraged and artisanal products to chefs throughout North America.
Some of the company's specialties include ice plant, which is native to South Africa but grown in Quebec, and the intriguing-sounding marshmallow root. Cool, no? Take a look at what else the company has in store.
2014 Latin America's 50 Best Restaurants
The highlight of our week was the 2014 edition of Latin America's 50 Best Restaurant awards sponsored by S.Pellegrino and Acqua Panna.
Peruvian chef Virgilio Martinez made it to the top of the list for his amazing work at Central restaurant in Lima. The second spot went to Astrid y Gastón (last year's winner) while D.O.M. in Sao Paulo came in at number three.
