This week on Fine Dining Lovers we spoke with Regina Tchelly - a chef who started a unique project in the favelas of Brazil.
Tchelly operates Favela Organica - an organisation that operates organic gardens inside the busy favelas and teaches the residents how to grow, store and cook in the most sustainable way.
Tchelly also teaches people how to reduce their food waste by teaching them recipes that use ingredients often thrown in the bin.

We caught up with Bryce Shuman from the Betony restaurant in New York just after he heard the news of being picked as one of Food & Wine’s Best Young Chefs in America.
The chef spoke a unique collaboration he’s working on for a hot-dog and explained why he’s inspired by the simplicity of enduring dishes like the apple pie.
He’s a chef with a unique upbringing and some interesting points that all young chefs should listen to.
