With a Michelin star under his belt and a spot on the World's 50 Best Restaurants list, Peruvian chef Virgilio Martinez is on his way to becoming a global star. In this video the chef explains his passion for Peruvian ingredients and the eco-friendly philosophy behind his flagship restaurant Central, currently the best restaurant in Latin America.
Located in Lima and with a robust garden, restaurant Central pays homage to the regional cuisines of Peru. Martinez and a team that includes his wife Pia León prepare interesting tasting menus using ingredients native to each region. ''Each dish represents one altitude, one ecosystem. So we want to make sure we only use products from one region in each dish. That’s the rule."
