In the meantime, Kokonas’ own restaurant, three-Michelin-star Alinea, which he owns with chef Grant Achatz, pivoted successfully to takeout and delivery. The duo were able to apply the lessons they learned from their pivot to provide a tech product that offered independent restaurants nationwide with exactly what they needed to keep trading.
