Chefs Jeremiah Stone and Fabián von Hauske, owners of the hugely popular Wildair and Contra restaurants in New York, are set to promote their debut cookbook with a tour beginning October 18th in Portland, Oregon.
A Very Serious Cookbook, released October 25th, is the first publication from Stone and von Hauske and promises 85 recipes covering the seasonal style and unique flavor combinations the pair have become famous for.
The book is split across three distinct categories: Sometimes, Always and Never. 'Always' will feature classic, staple recipes from the duo’s restaurants, it will also be the section of the book with non-seasonal dishes. 'Sometimes' will include hyper-seasonal recipes and 'Never' will feature one-off creations from the chefs. The back of the book also contains a pantry section with useful information on recurring ingredients.
1: Littleneck Clam, Almond Milk, XO / 2: Sardine, Umeboshi, Sourdough / 3: Beef Tartare, Smoked Cheddar, Horseradish. All pics by Matty Yangwoo Kim.
With a foreword by American comedian Eric Wareheim, the very serious title of the book should most definitely be taken with a very serious pinch of salt. Each recipe is paired with insightful, often hilarious narration from the chefs as they explain ideas, opinions and share stories from their travels and tastes in the world of food. It's all delivered in a light, informative, funny and passionate tone that offers something for both experimental home cooks and pro-chefs alike.
The three-stop launch tour, presented alongside the book's publisher Phaidon and S.Pellegrino, will hit Portland, Nashville and San Francisco with three one-off dining events. Guests will be invited to sample a range of small plates and cocktails inspired by recipes featured in the book and each event will also invite local collaborators to cook alongside Stone and von Hauske. The Portland launch, taking place at the Han Oak restaurant, features Peter Cho, Andy Ricker, Sam Smith, Geo Salas and Lauren Breneman.
Tickets for the Portland event cost $85 per person with a signed copy of the book included, tickets for the other events are yet to go on sale.
