ALMA, Italy's premier culinary institution, has launched a new program aimed at professionals in restaurant management. The Advanced Course of Sala & Bar (sala is the Italian word for dining room) is a six month program that teaches the key elements for successful restaurant service, bar management and catering.
The course will debut January 2015 and is divided into two parts: three months of theory at the school followed by a three-month internship at an international location. Students will become an authority on etiquette, techniques, and products while becoming experts in welcoming, managing, entertaining and serving guests.
All this will be accomplished while keeping with the Italian philosophy of grand hospitality, which offers guests a sophisticated dining experience with a personal touch. At the end of the course, participants will receive the following certificate: Professional of Sala & Bar. Assistant Restaurant & Bar Manager.
ALMA has hired experienced professionals to teach the course. Instructors include Luca Martini, named the 2013 Best Sommelier in the World; Giorgio Molinari, country manager for Martini & Rossi S.p.A.; and Andrea Grignaffini, director of the magazine Spirito diVino.
