- Avoid stirring the mixture any more than is necessary and don’t worry if it contains some lumps. It is necessary to incorporate as little air as possible to prevent your muffins from being too dry and compact.
- Baking times vary from one oven to another so, before taking your muffins out of the oven, test them first by inserting a wooden skewer. If the skewer comes out perfectly clean, the muffins are ready.
- To prevent them from cracking, wait until the muffins are lukewarm before removing them from the baking tray. Alternatively, bake them in special little paper cases.
