
Baked Potatoes with Bacon Filling
An easy recipe to prepare microwave baked potatoes with bacon filling: a quick and tasty recipe, prepared in the microwave instead of the traditional oven.

ingredients
Potatoes
4 large baking
Oil
2 tbsp
Shallot
1, finely chopped
Garlic
1 clove, finely chopped
bacon
8 rashers, chopped
tomatoes
2, deseeded and chopped
butter
4 tbsp
Cheese
150 g, grated
Preparation
To prepare the microwave baked potatoes prick the potatoes with a fork and rub with a little of the oil.
Cook in the microwave for 5-6 minutes or according to the microwave instructions.
Meanwhile, heat the remaining oil in a pan and fry the shallot, garlic and bacon until the bacon is browned and crisp.
Add the chopped tomatoes and cook for 2 more minutes.
Slice the cooked potatoes open, add a little butter then add the cheese and top with the bacon mixture.
Add the remaining butter, sprinkle with salt and pepper and serve the microwave baked potatoes immediately.
