Soak the noodles according to the packet instructions. Drain well, mix in 1 tsp oil and set aside.
Mix together the lime juice, fish sauce, sugar and chili flakes and set aside.
Heat 1 tbsp oil in a wok and pour in the beaten eggs.
Swirl the eggs around the pan to make an omelette, flip with a palette knife and turn out if the pan when cooked through.
Chop the omelette and set aside.
Heat the remaining oil in the pan, fry the garlic for 1 minute then add the prawns.
Stir fry until the prawns are cooked.
Add the noodles, lime juice mixture, chopped omelette and peanuts and heat through.
Serve immediately with the red mustard leaves scattered over.
