
Coconut Soup with Chicken
An exotic thai soup recipe with chicken, lime, coconut and ginger

ingredients
Oil
1 tbsp, sesame
Onion
1 each, sliced
Garlic
2 cloves
Ginger
Lemongrass
1 stalk, finely chopped
Pepper
2 each, red chilli
Chicken
350 ml, stock
Coconut milk
400 ml
Chicken breasts
2 each, skinned, cut into chunks
Limes
6 leaves
Soy Sauce
2 tbsp
Fish Sauce
1 tbsp
Sugar
1 tbsp
Lime juice
Preparation
Heat the oil in a large pan and gently fry the onion until soft but not brown.
Add the garlic, ginger, lemongrass and chilli and cook for 1 minute.
Add the stock and coconut milk, bring to a boil then add the chicken and lime leaves and simmer for 15 minutes.
Add the soy sauce, fish sauce, sugar and lime juice, heat through and serve.
