  • If you want to prepare a paleo lemon cake recipe start heating the oven to 180°C (160° fan)  gas 4.
  • Grease a 20 cm deep loose-based cake tin and line the base with non-stick baking paper.
  • Sift the dry ingredients into a mixing bowl and stir to combine.
  • Whisk together the honey and oil, then add the eggs, one at a time, whisking after each addition.
  • Add the coconut milk, lemon juice and zest, and beat until well combined.
  • Make a well in the centre of the dry ingredients and pour in the wet ingredients and stir thoroughly until smooth.
  • Put into the tin and sprinkle the pine nuts on top.
  • Bake for about 35 minutes until golden and springy to the touch.
  • Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
