STEP 1

For this cut you will need a pairing knife. You will also use a chef knife. Begin by cutting the root and stem of the onion. Now, carefully peel the skin off with your pairing knife. Do this by lifting the skin with and pulling it back. Now you are ready for the next step.



STEP 2

In this step, you will use a chef knife. Begin by cutting the onion in half, cut side down, on a cutting board. While holding the onion firmly by the root end, make vertical cuts running from the root until the tip of the onion. Make sure your cuts are evenly spaced and very thin. Now slice the onion crosswise. Hold the onion firmly, keeping the slices together, and make horizontal cuts into the onion. Once you are done, turn the knife into the vertical position and slice the onion. Gather all of your onion pieces and continue running the knife through them until they are small and even. You will need to do this several times. You should end up with very small cubes of onion.
