Graham crackers: 5.5 oz

Butter: 2.5 oz

Full-fat cream cheese: 32 oz

Granulated sugar: 7 oz

Sour cream: 7 oz

All purpose flour: 3 tbsp

Eggs: 3

Egg yolks: 1, beaten

Vanilla extract: 2 tsp

Preheat the oven to 350°F. Grease the base of a cake pan.

Place the graham crackers in a plastic bag and crush with a rolling pin into crumbs. Melt the butter in a pan over low heat and stir in the crumbs. Transfer to the cake pan and spread into an even layer, flattening with the back of a spoon.

Bake in the oven for 10 minutes. Remove and let cool. Reduce the oven to 315°F.

In a large bowl, beat the full-fat cream cheese and granulated sugar until smooth. Add the sour cream and all-purpose flour and beat again. Add the eggs, egg yolk, and vanilla extract, mixing until fully combined.

Pour the cream cheese mix over the prepared crust and bake in the oven for 45 minutes, until the edges are lightly golden.

After baking, turn off the oven and leave the door ajar. Allow the cheesecake to cool in the oven, then remove and cool completely before taking it out of the pan and serving. 

Tips & Tricks

To create the signature New York-style smooth cheesecake texture, use full-fat cream cheese and bring to room temperature before incorporating with the other ingredients. Similarly, the eggs should be at room temperature to help the batter emulsify. For a classic taste, source real vanilla extract to enhance the flavor.

During the cooking process, don’t open the door as this can cause the cheesecake to crack. Leave it shut during cooking and follow the steps outlined in the recipe above to let the cheesecake first cool in the oven for optimal results.

How to Store New York Cheesecake

Cheesecake can be stored in the fridge for up to three days. Cover loosely with plastic wrap and place in the coldest part of the fridge to avoid temperature fluctuations during storage. It’s also possible to freeze cheesecake. Given the density of a New York cheesecake, freezing won’t affect the texture. Make sure it’s fully cooled to room temperature and ideally refrigerate it overnight first to firm up the cheesecake.
