Canned black beans: 30 oz

Chipotle chile: 1, chopped

Vegetable broth: 16 oz

Heat the olive oil in a Dutch oven over medium heat. Add the diced onion, celery stalks, carrot, salt, and black pepper. Stir occasionally for 10 minutes, until the onion is soft and translucent.

Add the minced garlic cloves, ground cumin, ground coriander, and chili powder. Stir for 1 minute until fragrant. Stir in the black beans with the liquid and add the chopped chipotle chili with the vegetable broth. Turn the heat to low and let simmer for 30 minutes.

Once slightly cooled, transfer half of the soup to a blender. Pulse until smooth and add back to the pot. Stir and add a squeeze of lime juice. Season to taste and serve warm topped with fresh cilantro.

How to Get It Creamy Without a Blender

If you don’t have a blender, there are several ways to achieve the soup’s signature creamy texture. Once the beans are tender, mash some against the side of the pot using the back of a wooden spoon or a potato masher. This breaks down the beans and releases their starch into the cooking liquid, naturally thickening the soup.

The cooking liquid from the beans can also help create a silky mouthfeel. Simmer the soup uncovered for five minutes toward the end of cooking to reduce excess liquid and concentrate the flavors.
