Ground beef: 32 oz

Onion: 1

Garlic cloves: 4

Salt: 1 tsp

Black pepper: to taste

Worcestershire sauce: 1 tbsp

Italian hoagie rolls: 6

American cheese: 12 slices

Mayonnaise: 6 tbsp

Lettuce leaves: 6, shredded

Tomatoes: 2

Elevate lunchtime with an iconic New York chopped cheese sandwich, stuffed with ground beef, melted cheese, lettuce, and tomato. Read on for our favorite chopped cheese sandwich recipe below

Serves 6

Add the ground beef to a large skillet over medium heat. Cook for 8 minutes, stirring regularly and breaking up the beef until browned and crumbly.

Add the chopped onion and garlic cloves. Cook for 5 minutes, until softened. Season with salt, black pepper, and Worcestershire sauce. Remove from the heat and set aside.

Slice the Italian hoagie rolls in half and toast in a large skillet until browned. Set aside.

Divide the beef filling into 6 portions and add 1 filling to the skillet over medium heat. Once warmed through, cover with 2 slices of American cheese and cook until melted. Chop the cheese into the beef mixture using a spatula.

Spread 1 tbsp mayonnaise on a side of toasted roll and cover the beef filling in the skillet with the roll, toasted side down. After 1 minute, flip the roll. Add the shredded lettuce and tomato slices to the sandwich and serve immediately. Repeat for the remaining portions. 

Tips & Tricks

For an authentic chopped cheese sandwich, use the right style of bread. It’s typically made with an Italian hoagie roll that’s lightly crusty on the outside but soft on the inside. A New York bodega will usually only toast the inside of the roll, to keep the inside fluffy. 

A traditional Bronx-style chopped cheese sandwich uses 80/20 ground beef and keeps the seasoning simple, as in this recipe. Salt and black pepper are all that’s needed, but some chefs will add garlic and onion powder too. 

The defining element of the sandwich is the cheese. The classic variety to use is American cheese, that is layered on the beef, melted, and then “chopped” into the beef while cooking. This creates the sandwich’s signature gooey beef mixture.

Chopped Cheese History: The Bronx Original

The chopped cheese sandwich is a New York City bodega staple, traced back to the Bronx in the 1990s. It’s thought to have been popularized at a small, local bodega when a cook at the deli began chopping hamburger meat on the griddle instead of serving it in a patty. Mixed with melted American cheese in a hero roll, this inexpensive, filling sandwich quickly turned into a neighborhood classic. 

Today it’s considered an iconic symbol of Bronx street food and one of New York’s most recognized sandwiches. You can even find gourmet versions of this humble recipe on restaurant menus, in part due to its appearance on the television series, Parts Unknown, hosted by the late chef Anthony Bourdain.
